Nuts are brainfood. We can all agree that almonds are one of the tastiest of the bunch, and when you sprinkle a little bit of cinnamon, vanilla and sugar on them, roast them up à la “summer county fair style” you’ve got yourself a super delicious treat that you just can’t stop snacking on all day long. This is a healthier (but no less YUMMY) way to roast and candy your own almonds at home.
Carnival-Style Cinnamon Roasted Almonds
2 cups raw almonds
¼ cup organic coconut palm sugar
¾ tsp cinnamon
½ tsp salt
1 egg white
1 tsp vanilla extract
2 Tbs pure maple syrup
Preheat oven to 300 degrees F. Line a baking sheet with parchment paper; set aside.
In a small bowl, beat the egg whites until it forms stiff peaks, then add in the vanilla and maple syrup and beat again until incorporated.
In a medium bowl, combine the coconut palm sugar and cinnamon; set aside.
If your almonds are raw, you may want to pre-roast them for a few minutes. If you buy them already roasted, then follow the next step! Pour the almonds into the egg white mixture and mix until they are covered. Then stir in the sugar-cinnamon combo until the almonds are more or less evenly coated.
Spread this almond mixture onto prepared baking sheet in an even layer. Place into oven and bake for 25-30 minutes, stirring every 5-7 minutes. Let cool completely (this is when they will crisp up) before serving.
These seriously taste like candy; the kind of treats that bring back childhood memories of street fairs and carnivals, cotton candy and candied/roasted nuts in a bag.
